Chocolate Stuff

Chocolate Stuff is the signature recipe from the Sweet Potato Queens’ Big-Ass Cookbook and Financial Planner, and it is just the thing when you’ve got a bad case of the Mondays, if you catch my drift.

The key to this recipe is cooking it in a water bath so it comes out molten and gooey. If you just bake it, it comes out like a mediocre brownie and is hardly worth your time.

2 eggs
1 cup sugar
1/2 cup flour
1 stick butter
2 heaping tablespoons Hershey’s cocoa powder
1 tablespoon vanilla
nuts (optional)

Cooking Directions
In a medium-size mixing bowl, beat together eggs, sugar and flour until smooth. Melt the butter with the cocoa in a separate dish or pan (I use a glass measuring cup in the microwave). Combine all ingredients and add vanilla. Add nuts if you want. Pour mixture into a loaf pan, then set the loaf pan in a larger pan of water and cook at 300 degrees for 30 to 40 minutes.

Okay, so Chocolate Stuff is not Death by Chocolate cake, but it’s a quick, cheap, sure-fire way to quell your chocolate cravings at least long enough to get you through to Tuesday.

  1. some think pudding, some think cake. all i know is that i saw chocolate and butter and said sounds good to me. do NOT let it bake too long. you do not want a cake-like texture. gooey is best. i have actually made multiple batches, turned the stuff out into 2-3 bowls, gave everyone spoons and told them to help themselves. this is a killer recipe, also good with a little ice cream on the side or whipped cream.
